KHANDESHI
Khandeshi curries are as much about “Kaala” masala as that of unmistakable layer of floating oil, ‘Tarri’ as we call it. It is famous for its hot and spicy taste. Malvani masala, a spice powder from Malvan region of Sindhudurg district in Maharashtra. It is used mostly in Maharastrian and goan cuisine. Reddish in colour, this spicy powder gives a fiery hue and peppy taste to dishes it is added to. Like garam masala, the malvani masala too is very flavourful and fragrant. It blends in spices like dry red chillies, peppercorns, star anise, coriander seeds, cumin seeds, cloves, cinnamon, fennel and cardamom.
